Strawberry Blackcurrant Rosemary Jam
Ever-bearing strawberries with blackcurrants and our rosemary. This flavor reminds me of early August evenings, eating al fresco, a pile of biscuits, a puff of whipped cream, a dollop of this jam and a few fresh berries from the farmers market. This is a great flavor for nutty, hard cheeses like aged sheep milk and cheddars.

A sight to behold! This fat-laced salumi is cut from the back of the pig's neck, aged for 3 months, and dusted with black pepper and coriander. With the smooth, thin texture of prosciutto, but a more substantially fatty mouthfeel and seasoned flavor, it's the cornerstone of the deli-style Italian sandwich and it provides a warm counterpoint to the more delicately flavored elements on your traditional charcuterie platter. 3oz

Lazy Lady Farm | Westfield, VT
Lazy Lady Farm started in 1987 on barren land and in a small cabin. There was no electricity, no running water and no indoor plumbing. The farm was literally started from the ground up. So, “in the beginning”, she had 3 sheep, a goat named Blooper, and one acre of veggies. They operated with candles, gas lamps, and a car battery for running a radio. With every dime earned a nickel was put away to “grow the farm”.
Lazy Lady produces their own hay using organic farm practices: composted manure, minerals, and supplements such as calcium, rock phosphate, gypsum, lime etc. The goats graze on lush pastures from May to Nov. using rotational grazing. They feed non-GMO feeds, kelp, minerals, sunflower seeds, flax, and rolled oats. The non-gmo feed contains organic soy.
The herd is comprised of 40 registered Alpines and Saanens, with bloodlines coming in from out west to assure great milk production and great confirmation. The goats are the Lazy ones on the farm according to Laini, and she's absolutely right. While her goats luxuriate in lush pastures or listen to VPR in the barn, Laini flies about like a whirling dervish doing chores, making cheese, aging it, packaging it up for farmers markets, and then selling it herself at those same markets. Laini Fondiller and Lazy Lady Farm are American cheesemaking icons.

Bresaola
The vast majority of Italian salumi are made with pork, but beef eye of round is the star in here. Carefully crafted in Barre, Vermont, using the traditions from the Alps in Northern Italy, this ruby-red meat is nicely marbled and aged for 3 months with a touch of thyme, juniper, and black pepper. 3oz

Red Barn Lavash | Bristol, VT
Red Barn Lavash has been making cracker-like flatbread with spent grain for two years. Chef and founder Greg Lang gets the barley and some wheat from Long Trail Brewing Co. of Bridgewater Corners. Lang, executive chef of Killington Grand Resort, says he’s frequently cooked with beer, so it wasn’t much of a leap to utilize the spent grain in baked flatbread. 4oz
